We broke ground on our Tustin location at the new development called The District on the south west corner of the old "Tustin Air Base/Lighter than air(blimp)base. My mother-in-laws brother was sstationed there during WWII and he can't believe what is happening there. We closed the SAnta Ana location in order to move to Tustin in November. We had a good run at South Coast Plaza Village but it never took off and it just was too up and down for us. The Segerstrom's were great and helped us all along the way but unfortunately the center has too much vacancy and we need foot traffic.

My friends and I went to So Coast all the time, it was the most relaxing and nicest grill you have, I came all the way from Seal Beach and met my friends there, we loved sitting outside with the grass and "resident ducks" it was always busy, and many customers. we went a couple of weeks ago and was really upset it was closed. No mention of another location, or anything on sign. Tustin is too far for me, and the newport location just isn't the same atmosphere. Besides the waiter we always had William, was awsome, I,m sure he won't be in the new location. Too bad, you should of tried in a closer location in same area with the same feel. Instead you are going to the BIG BOX style, and I do not eat at those types of places. I like going to small intimate type places, that are calming to be in, and peaceful when you are dining. We'll really miss the S.C. location. I loved ordering the food the way I liked it and they were always very accommdating. The other rests. seem to be doing well, there was never any parking! We used to go on a Tue, or Wed. and you seemed busy. Too bad, we'll miss you and our waiter William!

Deez Bill will definitely be holding court at the bar at our new location in Tustin. While "Big Box" style developments lack the "charm" and the ducks of South Coast Plaza Village it will not lack people, a crucial element in operating a successful business. Believe me, we tried our darndest to make SCPV a success but with 60% vacancy and no signage it was impossible. Give us a try at Tustin and then judge. I think you will like what you see !

It is looking more like mid-December which means mid-January because we don't want to be scrooge and open and work those long hours during the holidays.

Just wanted to give an update on our construction progress and projected opening date for Bluewater Grill at The District in Tustin. It looks like we will start to hire and train employees in February and open in early March. Our landlord finally resolved all of their problems with the upstairs tenant that caused the delay in the first place and are back on track. Full speed ahead !

Now if you've gotten some of our favorite waiters and bartender Brian H. working with the crew in Tustin then it's bound to be a hit. Those two individuals were always the best in service, knowledge about the fish etc. being served. We always had the best experience there if both those two men took care of us. I have to say, it was not only a joy to have my son (Brian)wait on us but the food was sensational. I had a swordfish which apparently was prepared quite differently than I've experienced and it was fabulous. Every bit of the dinner was so good, preparation, presentation, and of course taste was outstanding. Thank you for the experience, the scrumpious!!! We can't wait to go again. Chris Rock, Jim, and the other partners congrats to you all on a beautiful new restaurant... We are so looking forward to visiting again.

A note to the owners and management Tustin: What a great restaurant; was with my girlfriends family on Friday night and had a fabulous meal at the new location. We started our meal with a great appetizer of smoke salmon and smoked albacore which was so tasty, prepared so fresh and did not have that bitter taste of salt, no tarter sauce needed for this appetizer. My dinner was the Maui Maui which was so excellent. This weekend I referred Bluewater to many of my friends and family. They look forward to visiting. Thank you so much to all the management at Bluewater for you've got a fine restaurant establishment and will do very well. The dinner experience will go down as one of the best I've had! Looking forward to visiting again soon.

We have Ipswich Fried Clams on our menu when they are available. We opened with a limited menu but they are on the menu now. Sorry for the need to open a little "light". I have been busy opening the Tustin restaurant and now that the dust has settled I can get back to some blogging. To answer the question about the picture behind us it is none other than John Wayne. "The Duke" had a home in Newport Beach and many of his children still live here and are frequuent guests at Bluewater Grill. The photo was given to us by Carolyn Olsen, the Daughter of BO Roos, John Wayne's original business manager. She lives on the water nrear BWG in Newport.

Just a week ago, I visited the Tustin location again and had our favorite Waiter Brian Hileman. He recommended the best of the menu that night which was harpooned swordfish. My gosh, it was the best ever! He described the way it was prepared, caught and explained that when fish is harpooned caught it is fresher, more milder in taste and it's texture if more tender. He was right! Thank you again Brian for making our evening so perfect. The wine, the dinner, and of course the service was outstanding.
