Local fisherman on day boats ply the local pacific waters in search of XIPHIAS GLADIUS or "The Gladiator Fish" Selectively harvesting only mature fish and processing them only minutes later, the fish can be cooled in special on-board blast refrigerators and rushed to Bluewater Grill in the same day. Most swordfish are caught on boats that stay out to sea for at least a week which yields an acceptable, but not premiere quality of fish. Because of the volume of swordfish we sell, we are capable of buying directly from the fisherman and often agree to purchase fish by cell phone with the captain of the boat while they are fishing! We pay thousands of dollars for a single large fish at prices and quality levels well above what is available from most fish distributors.
