If there’s one dish that epitomizes the Bluewater family of sustainable seafood restaurants, it is Harpooned Swordfish. That’s because no other seafood or shellfish on the Bluewater menu receives the same level of attention – both in the water and in the kitchen.
And, fortunately for seafood lovers throughout Southern California, Harpooned Swordfish is now in the peak of season at Bluewater Grills in Newport, Tustin, Redondo and Temecula; at Bluewater Avalon on Catalina Island; and at Bluewater Boathouse Seafood Grill in Coronado.
Start with the harvest. As part of Bluewater’s industry-leading commitment to seafood sustainability, the restaurant operates its own fishing vessel, The Pilikia, primarily to ensure the harpooned capture of swordfish from waters off Catalina Island and the California coast. By specializing in swordfish that has been harpooned or line-caught on The Pilikia and other sources, Bluewater eliminates much of the bycatch associated with driftnets and other methods of harvest.

Thanks to these and other efforts, more than 90% of the seafood offerings at Bluewater restaurants are sustainably caught or farmed – among the highest of any seafood restaurant in California. To be deemed sustainable, the seafood or shellfish must be certified by the Aquarium of the Pacific Seafood for the Future program; be designated a “Best Or Good Alternative Choice” by the Monterey Bay Aquarium’s Seafood Watch program; or adhere to strict Marine Stewardship Council best-practice standards for sustainable harvesting.
From there, the focus on excellence extends into the kitchen where Executive Chef Jason Mazur and his culinary team at each restaurant perfect their own special swordfish recipes. Simply Grilled Locally Harpooned Catalina Swordfish is also featured during our “Sustainable Seafood Feast: How to Enjoy Seafood and Know your Menu Choices are Sustainable,” part of our Second Tuesday Tasting series on September 8th. The special sustainable menu allows guests to select three courses, including a raw shellfish or hot seafood starter, a choice of signature chowder or lobster bisque, and an entrée, plus all-you-can-eat sourdough bread and butter. Valued at $60, the special $34.95 menu includes a chosen tasting of Acrobat wines from Oregon, voted the best wine to pair with seafood and oysters.
